Unlike most restaurants that serve the same menu day in and day out, when the Papps opened Bistro 54, they had a different concept in mind.
The small restaurant, which seats 48 diners, only is open Thursday through Saturday evenings, and the menu changes daily.
"If you like to cook and it's your passion, you keep trying to do new things," Linda Papp said. "We're open three nights a week, but it's a full-time job when you buy everything fresh and make it all from scratch."
The Papps had relocated to Florida three years ago, but were looking to move back to the area when Linda was checking waterfront property online. When she saw the residential property on Lake George, which was zoned for commercial use, she envisioned it as the perfect setting for her home and business.
"There's a walking path around the lake and we're planning an outdoor deck," she said. "We also have local art for sale on the walls. We live upstairs and the place is so beautiful. When you move somewhere like Florida, you think it's great, but eventually you want to come home."
The menu features fusion cuisine. Menu items, and prices, are written on a blackboard daily outside the restaurant.
"Since we've opened, business has been good, there's lots of local support," Papp said. "Customers like coming here, never knowing what we are going to serve."
